DeerEstimating Your Yield

How Much will I get?
Deer that have been properly handled after harvest will normally yield an average of 55% boneless meat to dressed weight when processed by our standards. Approximately 1/2 of the boneless meat will be "trim" which is only suitable for grinding. To estimate the return from your deer try out this form:

Venison Yield

Dressed Weight
Multiply by yield (55%)
X.55
Boneless Eatable Meat
Multiply by 50%
X.50
Trim for Grinding
Divide by 7.5
/ 7.5
Batches of Sausage
Example of  completed Venison Yield Form:
Dressed Weight
120#
Multiply by yield (55%)

Boneless Eatable Meat
66#

Trim for Grinding
33#
Divide by 7.5

Batches of Sausage
4.4

In this example you would be able to plan on four batches of sausage. The extra venison could be divided between the four batches.
