Estimating your yield How Much will I get?
Deer that have been properly handled after harvest will normally yield an average of 55% boneless meat to dressed weight when processed by our standards. Approximately 1/2 of the boneless meat will be "trim" which is only suitable for grinding. To estimate the return from your deer fill out this form: Venison Yield
Dressed Weight ______ Multiply by yield (55%) X.55
Boneless Eatable Meat ________
Multiply by 50% X.50
Trim for Grinding _______
Divide by 7.5 / 7.5
Batches of Sausage ________
Example of completed Venison Yield Form:
Dressed Weight __100#____ Mutiply by yield (55%) X.55
Boneless Eatable Meat ____55#____
Mutiply by 50% X.50
Trim for Grinding _____27.5#__
Divide by 7.5 / 7.5
Batches of Sausage ___3.66_____
In this example you would be able to plan on four batches of sausage. The little bit of weight difference could be compensated with extra pork
