 You did fine in the packaging of the hindquarter and should have no problem. The only thing that may show up is some slight freezer burn (drying
out) of the exposed surfaces. It is easy to spot as it will look white compared to the normal reddish color. While it is not harmful you may want to trim it off very thinly as it is basically freeze dried meat.
    What ever you make be sure to add pork and beef to put moisture back into the meat.
