    In the meat industry when stores cut beef and pork (That was processed in and came from federally inspected plants) most  will put a "sell buy"
date of 4 -5 days. This will normally give the consumer a day or two in their refrigerator before the product turns bad. That means that there is a maximum of 7 days before the meat industry feels the meat will be bad.
    Considering that deer are usually field dressed in the woods, dragged through woods, fields, logging roads, etc., then hung outside, processed on picnic tables or in garages, etc. it is safe to assume that they are not as bacteria free as federally and state inspected facilities would be, and therefore would not last as long.
    I doubt that you would buy beef and leave it in the refigerator for over two weeks and still eat it! I sure wouldn't do it with venison either.
    I think you should give it to the beef eater and buy "fresh" jerky.
