While it doesn't look good, it won't hurt anything. In the meat industry I've allways heard it referred to as being "blood shot."
It's said to be caused by the animal being stressed at the time it dies or because of a bump or injury to the area.
Most of us use the meat in the affected area for grinding into sausage or burger.
