I don't believe in leaving any meat sit in water. I would rinse it, vacuum pack or Ziplock bag it, wrap in freezer paper and freeze.

Considering it is a wild animal and therefore totally "organic" I would check the liver for parasites especially liver flukes. I'm sure you can Google "venison liver flukes" and find more information. Personally I leave the internal organs for the predators.
