The plan sounds good but I would do one thing different. After field dressing hang it in the shade head down and rinse it well with cold water. I would then fill the cavity with as many bags of ice as fits and let it cool over night.
Then skin and quarter the next morning. I would plan on finishing your processing the next day after a night in the coolers.
