You sure can, just like supermarkets sell frozen beef, pork, and chicken livers.
    I would recommend putting it in the freezer whole until it's just stiff enough to make slicing easy. Then slice and  package the slices is meal sizes, double wrap, and freeze.

PS. Be sure to watch for parasites in the liver as they are common in venison.
