Go to the "visual aids" page on our website and go down to "Boning the Round". First remove the Sirloin Tip then you can seam out the remaining Round in the same sequence that they are numbered. Take your time and follow the natural seams between each section. Take note that the Top Round contains what we know as the "false seam", be sure you follow the seam next to the Eye and not the false seam when separating the Top from the Eye.
