Clarence Birdseye would be proud of you! You most likly have found the meaning of "freeze dried" with the one that is skinned out.
Just like peeling a banana , once the hide is off a deer it speeds the drying processsing.
I would guess the two with the hide on are fine, but the quality of the other one may be less than perfect.
