When we encounter this  in deer it's usually localized to one area or side of the animal. I believe it to be the result of the blood vessels rupturing as a result of the impact of a bullet,  arrow, car, or the hoof / antlers of another animal.
    If it was throughout the whole animal I'm at a loss to explain it as I've never see that much damage except on a road kill with a semi.
