If you browse our FAQ page and archives you will find numerous references to "hanging, holding, and aging deer". The bottom line is, in my opinion, the sooner you get in a commercial cooler the better the quality you will have.
The longest I've held a deer this year from harvest to cooler was the last one I got on Dec16. It was six hours before I got it in the cooler. (Outside temperatures were in the teens.)
In temperatures above 40 I try to get it in the cooler within a couple of hours. Am I fanatic about temperatures and bacterial growth? Absolutely! However I've never had a deer spoil on me either.
