Your temperatures were cold enough. Did you rinse it well with cold water after field dressing? If not you should, then put a good dusting of baking soda through out the cavity. (Hang it with the hide on.)
    After you skin it on the weekend rinse the baking soda out of  the cavity with cold water before you cut it and it should be fine.
