Any meat can be ground by itself, however as a meat man and hunter for over forty years I will not recommend or eat straight ground venison. I also never recommend adding "fat" to venison.
    The best mix of ground venison we've ever  eaten (and a lot of our customers feel the same way) is grind the venison with 25% of the venison weight in lean pork butt and 12 & 1/2% Ground Beef Chuck. i.e, 20# venison, 5# pork butt, 2.5# Gr Chuck
    Run it twice through a 1/8" plate, mix well between the first and second grind.
