Your back strap is now 26 days old without having been frozen. When I cut meat for the fresh meat case of the store I work at, I allow four days case life. That gives the customer at least another two days in the refrigerator without risking any problems. That's a total of six days fresh.
    Would you buy a steak, pork chop, or chicken and expect it to last 26 days in the refrigerator? I sure wouldn't.
    How could venison that's field dressed in the wild, then hung outside be expected to last that long?
    I think you know the answer.
