Because the vast majority of venison processors do smoked and cooked sausage, when we went into processing we decided to specialize in fresh venison including only fresh sausage.
    Hotdogs are cooked and/or smoked so we can't help you. There are several books available on making smoked sausage. Try Amazon.com
