I totally understand the question, the problem is that we do not make any cooked, smoked, or cured items. So we have not made any venison bacon.
    To the best of my knowledge it was developed by "Hickory Nutz  Meats" of Medford , Wisconsin back in the 80's. It has spread from there and several processors do it. There are also several spice companies that have attempted to clone the recipe and you can by spices from them with the instructions included.
    Basically you add the seasonings to coarse ground venison pad it out in a pan and cook it in the oven.
