Whom ever told you that is obviously not a meat person. When I started in the meat business back in the late 60's early 70's all the Ground Beef was made from frozen beef. Some stores today still make it that way.
    As for Ruth and I we harvest several deer a year and want our burger "fresh" so we freeze the venison trim in 10# bags and then thaw and grind burger several times a year.
    You'll have more problems if you make 100# of burger at a time and then have to try and hold that frozen for extended periods.
    Tell the nay sayers that their full of bologna! (Not burger)
