You would need to check the temperature of you refrigerator. Many times they are warmer than commercial coolers. If you're at 36F or less the quarters should hold, however regardless of the temperature I would not hold the boneless trim that long. The trim has too much exposed surface area being in small pieces and will loose it's moisture over that long of a time just refrigerated.
I would freeze the trim now and then pull it out on Thursday and put it refrigerator to finish up on Saturday with the quarters.
