The first question I have is where is the rest of your deer! I cut a 53# road kill this summer and got 27# of meat off of it, if I was to make sausage and add pork I'd have at least 45# of finished product. I hop you got 5# sticks.
As you may have seen we do not make any smoked/cooked product so I would only be speculating. You should take the sausage back to your processor and ask him what the problem is. Any reputable processor should replace the product or offer you a refund or credit toward your next processing.
I would guess that there was not enough pork added or it was over smoked/dried.
