As meat specialist for a grocery wholesalers for almost 20 years I was able to visit hundreds of grocery stores across Wisconsin, Minnesota, and the Upper Peninsula of Michigan. While in these stores I noticed that several still had rail systems that were no longer used because of the advent of boxed beef.
When I decided to have a cutting room built at my house for doing venison, I contacted a few of these stores and they were more than happy to get rid of the rails for a token amount as long as I was willing to remove them.
If you check around with grocery stores that have been around since the 60's and 70's I'm sure you will find some that still have rails that they no longer use. Otherwise get in touch with your Department of Agriculture and see if they can give you the name of the food safety inspector for grocery stores in your area. If you contact him/her I'm sure they would be able to point you to stores with old rail systems.
If that doesn't work let me know and I'll see what I can find.
You may also want to include a hoist for lifting them up to the rail. I got mine through "Northern Tool" for around $100. One of my better investments. Here's the link to find it:
