We make numerous varieties of venison brats and have  found that using 7.5# of venison (60%) and 5# of pork (40%) work the best for us. Commercial brat seasonings are pre-made for 25# batches so we weigh out 1/2 a bag and make 12.5# batches. We offer the same seasoning (Sheboygan Style Brat) as we use in our shop for sale on our website.
    We also use a stuffing tube on our grinder for making the brats and find that it works faster and just as well as a stuffer. (For a lot lower investment.)
