As you would expect there are several variables that would affect the answer to this question. Everything that could affect the quality of the meat up to the time you packaged it can cause the shelf life of the meat to be reduced.
If the deer died quickly, was field dressed immediately, the air temperature was under 40 degrees, it was put into refrigeration soon after harvest, and was processed in a clean environment within a few days then your meat packaged in vacuum packages should be ok that long. However seven days for ground meat is really pushing the limit. In the meat case we only allow 24 - 36 hours with regular packaging.
I would recommend that next time you freeze it immediately to avoid any problems.
