Because the front shoulder consists of several muscles that vary from very tender (Top Blade & Taris Major) to very tough. (Shank meat) I would not prepare it in one piece. 
    If you go to our "Visual Aids" page you can download the instructions for cutting the front shoulder. I would prepare the Mock Tender and the English in the crock pot as roasts. The Top Blade can be grilled. The rest of your trim from the shoulder can be ground with pork and beef for burger.
    Boning it this way will give you more  and better meals.
