Absolutely! We do this all the time with our own wild game. We've found it's better to make our burger several times a year rather than grinding it all in one shot. This way we have "fresh frozen" burger all year long.
Leave your scraps in the biggest pieces possible, place at least 10# in a heavy plastic bag, and overwrap with locker paper. (Or place in a brown grocery bag and tape shut.)
When thawing to grind, thaw in the refrigerator to minimize moisture loss and use as soon as it's soft enough to cut into grinding size pieces. It's better to grind it while it's still partially frozen.
