If you do a search of "hanging or aging" on the FAQ page of our website you should find several times I've addressed this issue.  Unless you have a cooler that maintains a consistant temperature at 35 or less, I don't believe in hanging your deer.
    If I can, I cut my deer within 48 hours or less.
    Stick with the three C's when doing deer and you will have "fresh" vension.
            1) Clean it
            2) Cool it.
            3) Cut it.
