Even under the most ideal conditions you have probably met or surpassed the maximum time. There is not blanket answer for such a question as the variables are enormous starting from the time the trigger was pulled or the arrow was released.
Some of the things that affect it are: How long until it was field dressed? What was the outside temperature? Was it rinsed inside the cavity? How fast was it cooled down? Is it a whole carcass with the hide on, or has it been skinned? How was it wrapped? What's the temperature of the cooler? How long are the defrost cycles, and how warm does the cooler get when on defrost? What's the humidity level? Is it starting to mold?
If you do a search of "hanging deer" on our FAQ page you will find more information of hanging.
My recommendation is follow my 3 C's:
1) Clean it.
2) Cool it,
3) Cut it.
There is no reason to hang it for the period of time you describe and very often I've cut my own within 24 hours. Try it, you'll find "Fresh Venison" is very good!
