I imagine your question is motivated by a lot of horror stories that you may have heard about hot dogs. Let me assure you, the hot dogs of today are subjected to intense rules, regulations, and inspection. Don't worry, internal organs are not used! If you refer to the label it will tell you in desending order what's in it. Normally the more expensive hot dogs are all beef, the middle range a mix of beef and pork, and the least expensive a combination of any of the following: beef, pork, chicken, or turkey.
Skinless hotdogs are cooked without being stuffed into a casing (a mold is used), where as skin-on or natural casing hot dogs are stuffed into casings made from the small intestine of hogs or sheep. Rest assured they have been throughly cleaned and packed in salt prior to use.
Yes, I still eat and enjoy hot dogs! Skinless and skin-on.
