The question is what kind of leg meat is in the package? If it's what I suspect, it may be boneless shank meat suitable for grinding only. However if it is from the hindquarter and is lean pieces then it could be chunks of Round Steak suitable for stew.
Your best bet is to thaw it out and check what it looks like. If it contains a lot of silver skin then grind it. If it is all lean meat then I would use it for stew, chopsuey, stirfry, noodles & tips, etc.
