to say I don't have any recipes for the heart and liver. I do know
that "Pickled Heart" is quite popular here in the midwest. I would
recommend trying www.recipesource.com
I
have stayed away from the internal organs on the recommendations
of the World Health Organization, due to the concerns over CWD
and bovine TB that has shown up in some deer. Whether or not the
concerns are justified, I have not gotten quite hungry enough to
eat the heart and liver.
