I have to say that in my opinion the media and the Wisconsin
D & R are blowing the CWD issue way out of hand. It has
existed in Colorado and some of the other western states
for over 30 years. In that time there is no evidence that
it has ever been contracted by a human being. Every year
since it was discovered hunter still flock to the western
states to hunt with
little or no concern. If in fact it was ever found to jump
species it has been
say it would be compared to "Mad Cow" or Crutzfeld-Jakob disease. That
disease occurs at the rate of 1 in 1,000,000! I have to believe that if it was
contagious (which it has never been) we would stand a much better chance of dieing
in a car accident!
As for our processing, we have always processed boneless, and only do one deer
at a time. I may not cut off antlers this year in order to put my customers at
ease, however if I did I would only use that saw for the purpose of removing
antlers and I would sanitize the blade with a bleach solution. (I would not throw
it away.) The other thing that I consider as a meat department specialist and
having been in the meat business for over thirty years is the fact that
people are known to die from E Coli which has been found in Ground Beef at times.
We still eat hamburgers. People have died from Samonella which can be found in
chicken at times. We
still eat chicken. People have died from Listeria which can be found in lunch
meats. We still eat bologna. People die from lung cancer. Many still smoke.
Nobody has been known to die from CWD! And people say they will quit hunting
and quit eating venison. That is stupidity in my opinion!
